Ok, so I lost 3 pounds this week...31 more pounds till goal:-) That's amazing to me. I really want to step things up with my work outs and crank it up a bit with the toning. I can feel my body underneath the leftovers of my former life. I want to maximize the results I hope to get with the SSDDDC.
Alright, I don't have too much cooking to do today...I made a lot of protein dishes last week and I made some awesome turkey soup yesterday. On the menu today we have: turkey and quinoa mealoaf--adapted from allrecipes.com (already cooking in the oven and smelling amazing!); butternut squash w. apples (no beans) soup--adapted from Debbi Does Dinner Healthy; Pumpkin loaf--adapted from The Joy of Cooking (cookbook); and "PF Chang's" coconut-curry vegetables--adapted from CDKitchen's webiste, will be adding chicken instead of tofu.
Ok, meatlaof is done so I need to get with the rest of my dishes before my babysitter has to go home and get ready for school tomorrow. If I remember, 1st grade can be tough! lol My son is quite occupied with his older god-brother. I'm able to get lots done in between the boo-boos, boo-hoos and ya-hoos (which usually isn't a good sign.)

ReplyDeleteI've got 30 pounds to go to goal weight. Food sounds absolutely divine. Do you have a recipe for the pumpkin loaf? I'd love to make that if it's lower cal.

I guess it'll be good if you prepare low cholesterol chicken breast recipe instead of meatloaf.

@Shantel: All of my foods are low cholesterol. I don't cook with fats and only use ground turkey breast (most of the bad stuff is in the dark meats.) This was a ground turkey breast meatloaf with a quinoa (high protein grain) not bread crumbs etc. Besides, there are tons of chicken breasts already portioned out in my freezer:-) Variety is the spice of life.
ReplyDeleteThanks everybody on the congrats and everything but the pumpkin loaf turned out amazing! Still working on adapting baked goods so that I can have them...think I'll stick to perfecting the muffins first. The loaf was a total flop.
@Beth--I got the recipe from the Joy of Cooking but I don't know the nutritional content as I alter for my program and leave out butter, milk, all purpose flour. WEll, I guess that means is not low cal, huh? Go online and type in low-cal loaf...I'm sure tons of recipes will pop up.
